I love to read Shannon’s post. There are a ton of good tips on there. Since I have been lurking there every Wednesday, I decided to join in the fun!
Abbey has so many allergies that making cakes, brownies, or cookies can be hard. My mom found a recipe on the Weight Watchers site that is egg free! All you need is a can of soda (I said soda in case any northern people actually read this haha!) and a box of cake mix. Mix the cake mix and soda together. Pour it in your pan and cook. It is moist and delicious. The only problem is you will probably have to leave it as a sheet cake, because it will not stay together. We love it at my house. The best part is that Abbey can actually have dessert with the rest of us. Another great thing…. it is also better for you because it doesn’t have oil or eggs! You can use any cake mix and any kind of soda. I like to use the white cake mix and a fruity drink (peach, orange, strawberry).

If you can do dairy, here’s another one that’s great!!! I’ve made it as a sheetcake, cupcakes, and a bundt cake. Tonight I made yellow cupcakes with choc frosting using vanilla pudding, yellow cake mix…minus the choc chips. My kids loved them. My daughter has egg and peanut allergies, so we’re always on the lookout for something new. Thanks for the recipe!
